I feel so much better. I have more energy and I have fewer stomach problems since I'm not eating processed carbs like bread, rice, or pasta. But what can I eat to substitute for these foods?

I'm so very glad to hear you're feeling better, and I know how you feel being more energetic. I get sick a lot less too, and my metabolism is much better without these foods in my diet. Replacing these foods is easy! Here is what I do:
Replace bread with lettuce, used as a wrap. Or, think outside of the breadbox and stuff a pepper or tomato instead.
For rice, I use Riced Cauliflower, and I like it much better. Season it the same way. You'll save lots of calories and carbs.
You can substitute pasta with all kinds of spiralized vegetables like zucchini, celery, or yellow squash. These taste better and won't slow your metabolism the way gluten can. Spaghetti squash is always delicious as well.
